Almond Pecan Ayurvedic Cookies

Gluten free, vegan & refined sugar free - these cookies are packed with healthful ingredients such as hemp and chia seeds!

Ingredients
  

  • 1 c Almond Flour
  • 1/2 c GF Quick Oats
  • 1/2 c Maple Syrup
  • 1 t Cinnamon
  • 1/2 T Hemp Seeds
  • 1/2 T Chia Seeds
  • 2 T Oat or Coconut Yogurt
  • 1 T Vegan Ghee
  • Pepitas or Coconut Sugar for topping Optional

Method
 

  1. Preheat oven to 350f/160c. Prepare a baking sheet with a silpat.
  2. Mix together all ingredients into 1 bowl until a sticky dough forms. Roll into 12 small balls, and pat down gently (cookies will not spread in oven).
  3. Top with pepitas or coconut cinnamon sugar (optional)
  4. Bake for 15-20 minutes until edges are just slightly golden. Let cool and enjoy!
