Almond Pecan Ayurvedic Cookies
Gluten free, vegan & refined sugar free - these cookies are packed with healthful ingredients such as hemp and chia seeds!
- 1 c Almond Flour
- 1/2 c GF Quick Oats
- 1/2 c Maple Syrup
- 1 t Cinnamon
- 1/2 T Hemp Seeds
- 1/2 T Chia Seeds
- 2 T Oat or Coconut Yogurt
- 1 T Vegan Ghee
- Pepitas or Coconut Sugar for topping Optional
Preheat oven to 350f/160c. Prepare a baking sheet with a silpat.
Mix together all ingredients into 1 bowl until a sticky dough forms. Roll into 12 small balls, and pat down gently (cookies will not spread in oven).
Top with pepitas or coconut cinnamon sugar (optional)
Bake for 15-20 minutes until edges are just slightly golden. Let cool and enjoy!
