Healthy Nut Butter Shortbread Bars

These delightful and delightfully easy little no-bake treats mimic the texture of buttery shortbread and have a healthful topping of dark chocolate with nuts & amaranth! Gluten free, vegan and refined sugar free!

Ingredients
  

  • 1 cup Peanut Butter
  • 1 cup Coconut Flour
  • 1/2 cup Maple Syrup
  • 3.5 oz Dark Chocolate 100g
  • 1/4 cup Peanut Butter
  • 2 tbsp Coconut Oil
  • Handful Chopped Walnuts
  • 2 tbsp Puffed Amaranth
  • 1/8 tsp Sea Salt Flakes (optional)

Instructions
 

  • Combine peanut butter, coconut flour and maple syrup in bowl. Firmly pack into an 8x8 baking dish to form an even layer about 1/2" thick.
  • Freeze the base while you prepare the topping.
  • Add dark chocolate, peanut butter and coconut oil to a bowl. Heat bowl gently in the microwave or over a saucepan filled with simmering water on the stove until chocolate has fully melted.
  • Remove base from freezer and pour dark chocolate mixture over crust. Sprinkle with walnuts, puffed amaranth, sea salt flakes or other add-ins you desire! (Dried fruit, pistachios, almonds?)
