Flax egg prep: Mix 1 tbsp Flaxseed meal with 3 tbsp water. Let rest for 10 minutes
Whisk flours, baking powder & baking soda
Add in yogurt, vanilla, flax egg & almond milk until a batter forms
If batter is much too thick, add a tablespoon or so of milk to loosen slightly
Coat skillet with a small amount of vegan butter (optional). Drop 1/4c batter to skillet and cook until bubbles appear on surface. Flip and cook for an additional 2 minutes
Stack pancakes adding a layer of coconut yogurt, bananas and sprinkle of cacao nibs between the cakes. Top with a scoop of banana nice cream, blueberry coulis, sliced strawberries and dark chocolate chips. Drizzle with peanut butterĀ
