Quinoa Banana Flour Pancakes

Nutty Banana Pancakes made with dehydrated banana flour

Ingredients
  

  • 1/2 cup Quinoa Flour
  • 1/2 cup Dehydrated Banana Flour or sub additional quinoa, flour of choice
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 3/4 cup Coconut or Soya Yogurt
  • 1 tsp Vanilla Extract
  • 1 Flaxseed Egg
  • 1/4 cup Almond Milk

Method
 

  1. Flax egg prep: Mix 1 tbsp Flaxseed meal with 3 tbsp water. Let rest for 10 minutes
  2. Whisk flours, baking powder & baking soda
  3. Add in yogurt, vanilla, flax egg & almond milk until a batter forms
  4. If batter is much too thick, add a tablespoon or so of milk to loosen slightly
  5. Coat skillet with a small amount of vegan butter (optional). Drop 1/4c batter to skillet and cook until bubbles appear on surface. Flip and cook for an additional 2 minutes
  6. Stack pancakes adding a layer of coconut yogurt, bananas and sprinkle of cacao nibs between the cakes. Top with a scoop of banana nice cream, blueberry coulis, sliced strawberries and dark chocolate chips. Drizzle with peanut butterĀ
