Vegan Chocolate Avocado Cookies

One bowl gluten free oat and avocado cookies with plentiful chocolate chips make for an indulgent yet healthful snack!

Ingredients
  

  • 1 Ripe Avocado, smashed
  • 2 T Almond Butter
  • 1 T Avocado Oil
  • 3 T Maple Syrup
  • 90 g GF Oats
  • 2 T Cacao Powder
  • 50 g Vegan Chocolate Chips

Method
 

  1. Preheat oven to 350f/160c. Prepare a silpat or baking paper on baking tray.
  2. Smash avocado with remainder of ingredients until a very sticky dough forms.
  3. Place by heaped tablespoonfuls on to baking tray, shaping in desired thickness and width.
  4. Bake for 15-20 minutes.
  5. For added fun, drizzle some almond butter on top and a sprinkle of sea salt!
