Vegan Chocolate Avocado Cookies
One bowl gluten free oat and avocado cookies with plentiful chocolate chips make for an indulgent yet healthful snack!
- 1 Ripe Avocado, smashed
- 2 T Almond Butter
- 1 T Avocado Oil
- 3 T Maple Syrup
- 90 g GF Oats
- 2 T Cacao Powder
- 50 g Vegan Chocolate Chips
Preheat oven to 350f/160c. Prepare a silpat or baking paper on baking tray.
Smash avocado with remainder of ingredients until a very sticky dough forms.
Place by heaped tablespoonfuls on to baking tray, shaping in desired thickness and width.
Bake for 15-20 minutes.
For added fun, drizzle some almond butter on top and a sprinkle of sea salt!
