Green Tea Salad with Activated Buckwheat
This traditional salad known locally as ‘laphet thoke’ is a fresh salad offered to guests as a gesture of good health.

- 100 g Activated Buckwheat Cooked
- 1 tin Corn
- 1 tin Chickpeas
- 1 tbsp Olive Oil
- 1 tbsp Cumin
- 1/4 head Cabbage
- 1 bag Spinach
- 1 Carrot Grated
- 1 punnet Baby Tomatoes
- 4 tbsp Green Tea Dressing *See Notes
Place chickpeas in a bowl, add 1 tbsp olive oil and 1 tbsp cumin. Roast for 20 minutes at 200c/400f until crisp.

Grate carrot, chop cabbage, halve tomatoes and cook buckwheat.
