Healthy Banana Oatmeal Cookies with Quinoa
Packed with wholesome ingredients, including ripe bananas, gluten-free oats, and nutritious quinoa flakes, these vegan and gluten-free treats are perfect for satisfying your sweet tooth while nourishing your body.

- 1 Ripe Banana mashed
- 2 T Oil
- 3 T Maple Syrup
- 1/2 cup Almond Meal
- 1 t Vanilla
- 1 c Gluten Free Oats
- 1/2 c Quinoa Flakes
- 1 T Flaxseed Meal
- 1 t Cinnamon
- 1/2 c Chocolate Chips vegan
- 1 t Baking Powder
- Pinch Salt
Preheat oven to 160c/350f.
Line a baking sheet with a silpat or baking paper.
Combine all ingredients in bowl, mix until combined.
Scoop on to baking sheet, bake for 12-15 minutes. This recipe makes about 12 cookies. Stores well in the fridge for up to a week, or freeze!
