Ingredients
  

  • 1 Ripe Banana mashed
  • 2 T Oil
  • 3 T Maple Syrup
  • 1/2 cup Almond Meal
  • 1 t Vanilla
  • 1 c Gluten Free Oats
  • 1/2 c Quinoa Flakes
  • 1 T Flaxseed Meal
  • 1 t Cinnamon
  • 1/2 c Chocolate Chips vegan
  • 1 t Baking Powder
  • Pinch Salt

Instructions
 

  • Preheat oven to 160c/350f.
  • Line a baking sheet with a silpat or baking paper.
  • Combine all ingredients in bowl, mix until combined.
  • Scoop on to baking sheet, bake for 12-15 minutes. This recipe makes about 12 cookies. Stores well in the fridge for up to a week, or freeze!

      You can substitute mashed avocado or unsweetened applesauce for banana in this recipe. Both options provide moisture and binding properties similar to banana. Simply use an equal amount of mashed avocado or applesauce as you would mashed banana. Enjoy your cookies!
