Healthy Banana Oatmeal Cookies with Quinoa

Packed with wholesome ingredients, including ripe bananas, gluten-free oats, and nutritious quinoa flakes, these vegan and gluten-free treats are perfect for satisfying your sweet tooth while nourishing your body.

Ingredients
  

  • 1 Ripe Banana mashed
  • 2 T Oil
  • 3 T Maple Syrup
  • 1/2 cup Almond Meal
  • 1 t Vanilla
  • 1 c Gluten Free Oats
  • 1/2 c Quinoa Flakes
  • 1 T Flaxseed Meal
  • 1 t Cinnamon
  • 1/2 c Chocolate Chips vegan
  • 1 t Baking Powder
  • Pinch Salt

Method
 

  1. Preheat oven to 160c/350f.
  2. Line a baking sheet with a silpat or baking paper.
  3. Combine all ingredients in bowl, mix until combined.
  4. Scoop on to baking sheet, bake for 12-15 minutes. This recipe makes about 12 cookies. Stores well in the fridge for up to a week, or freeze!
