Amaranth Protein Balls

Healthy protein-packed bite-sized treats great for any time of day

Ingredients
  

  • 1/2 cup Amaranth Puffs
  • 1/4 cup GF Oats
  • 2 tbsp Flaxseed Meal
  • 1/4 cup Chopped Almonds, Hazelnuts or Walnuts
  • 1/4 cup Hazelnut Butter
  • 1/4 cup Peanut Butter
  • 2 tbsp Maple Syrup
  • 1/4 cup Dark Chocolate Chips melted (topping, optional)

Instructions
 

  • Combine all ingredients except dark chocolate in a bowl
  • Form into bite-sized balls, packing together the mixture. If mixture does not hold together easily, add additional nut butter
  • Melt dark chocolate and dip 1/2 of the protein ball, sprinkle with additional amaranth puffs or crushed nuts
