Amaranth Protein Balls

Amaranth Protein Balls
Healthy protein-packed bite-sized treats great for any time of day
Ingredients
- 1/2 cup Amaranth Puffs
- 1/4 cup GF Oats
- 2 tbsp Flaxseed Meal
- 1/4 cup Chopped Almonds, Hazelnuts or Walnuts
- 1/4 cup Hazelnut Butter
- 1/4 cup Peanut Butter
- 2 tbsp Maple Syrup
- 1/4 cup Dark Chocolate Chips melted (topping, optional)
Instructions
- Combine all ingredients except dark chocolate in a bowl
- Form into bite-sized balls, packing together the mixture. If mixture does not hold together easily, add additional nut butter
- Melt dark chocolate and dip 1/2 of the protein ball, sprinkle with additional amaranth puffs or crushed nuts
