PB&J Buckwheat Donuts

PB&J Healthy Buckwheat Donuts

Gluten free & vegan donuts made with buckwheat flour, covered in homemade strawberry chia jam and peanut butter!

Ingredients
  

  • 1 cup Buckwheat Flour
  • 1/4 cup Coconut or Brown Sugar
  • 1/2 tsp Baking Soda
  • 1 Mushed Banana
  • 1/2 cup Nut milk
  • 1/2 tbsp Apple Cider Vinegar Or juice of 1/2 lemon

Method
 

  1. Preheat oven to 200c/400f
  2. Combine flour, sugar & baking soda
  3. In another bowl combined mashed banana, milk & vinegar (homemade vegan buttermilk!)
  4. Combine dry ingredients into wet until well mixed
  5. Grease donut (or muffin) pan
  6. Fill each tin 3/4 full
  7. Bake for 15-20 minutes
  8. Allow to fully cool before topping with *strawberry chia jam, peanut butter and/or vanilla icing glaze
