GF Vegan Wild Rice Balls

I’ve really been loving any food items I can shape into convenient bites. These GF Vegan Wild Rice Balls satisfy that requirement as well as being so versatile! Serve on their own as an appetizer with a dipping sauce. Or perhaps toss a few over a salad. Get real crazy and put three into a sub sandwich or serve over pasta and marinara! These are a great alternative to meatballs. They also freeze well, so you can make a batch and freeze the rest for a quick weeknight meal or snack. I have adapted this recipe from my Wild Rice Burgers, which are also equally as delicious!

GF Vegan Wild Rice Balls

Delicious little savory bites delicious on their own or perfectly paired with a salad

Ingredients
  

  • 1 cup Wild Rice *I used a blend – see notes
  • 1 3/4 cup Vegetable Stock
  • 5 tbsp GF Panko Breadcrumbs
  • 5 tbsp Vegan Mayo
  • 5 tbsp Vegan Parmesan
  • 5 tsp Potato, Tapioca or Corn Starch
  • 1 1/4 tsp Garlic Powder
  • 1 1/4 tsp Onion Powder
  • 1 1/4 tsp Curry Powder
  • 5 tsp Nutritional Yeast
  • 1/2 tsp Salt

Instructions
 

  • Cook rice per package instructions, or use 1 cup per 1 3/4 cup stock. You can also use water here, if desired.
    1 cup Wild Rice, 1 3/4 cup Vegetable Stock
  • Allow rice to cool and mix in remainder of ingredients. Form into golf ball-sized balls. Saute on medium heat for 3-4 minutes per side.
    5 tbsp GF Panko Breadcrumbs, 5 tbsp Vegan Mayo, 5 tbsp Vegan Parmesan, 5 tsp Potato, Tapioca or Corn Starch, 1 1/4 tsp Garlic Powder, 1 1/4 tsp Onion Powder, 1 1/4 tsp Curry Powder, 5 tsp Nutritional Yeast, 1/2 tsp Salt

*Note – I like using the Lundburg Wild Rice Blend here. The rice in the mixture allows for easy ball formation! Straight wild rice can be used, but it is trickier to work with and falls apart easier.
