Healthy GF/Vegan Banana Bread
Healthy GF/Vegan Banana Bread
A rich, moist vegan banana bread made with healthful ingredients using GF flour, cinnamon yogurt and flax.
Ingredients
- 2-3 ripe bananas
- 150 g GF Flour *I used GF Oat Australia GF Flour (see notes for link & discount)
- 66 g Raw sugar or granulated
- 1 tbsp Baking Powder
- 1/2 tsp Baking Soda
- 1/8 tsp Salt
- 1.5 tsp Cinnamon
- 90 ml Almond Milk
- 60 ml Oil coconut, sunflower, vegetable
- 2 tbsp Yogurt
- 1 tbsp Flaxseed meal
- 50 g Dark Chocolate chips or walnuts, if desired
Instructions
- Preheat oven to 350f/160c fan. Prepare standard 1lb loaf tin with baking paper.
- Combine dry ingredients in a bowl150 g GF Flour, 1 tbsp Baking Powder, 1/2 tsp Baking Soda, 1/8 tsp Salt, 1.5 tsp Cinnamon
- In additional bowl, mash bananas well and add rest of wet ingredients and sugar.2-3 ripe bananas, 90 ml Almond Milk, 60 ml Oil, 2 tbsp Yogurt, 1 tbsp Flaxseed meal, 66 g Raw sugar
- Add dry ingredients into wet, mix until just combined.
- Add dark chocolate chips and/or walnuts, if using. Spread batter into prepared loaf tin and bake for 35-40 minutes until knife inserted into center comes out clean. Allow to cool before slicing. I always enjoy my vegan banana bread slightly toasted!
