Quinoa Banana Flour Pancakes
Nutty Banana Pancakes made with dehydrated banana flour
Ingredients
- 1/2 cup Quinoa Flour
- 1/2 cup Dehydrated Banana Flour or sub additional quinoa, flour of choice
- 1 tsp Baking Powder
- 1/4 tsp Baking Soda
- 3/4 cup Coconut or Soya Yogurt
- 1 tsp Vanilla Extract
- 1 Flaxseed Egg
- 1/4 cup Almond Milk
Instructions
- Flax egg prep: Mix 1 tbsp Flaxseed meal with 3 tbsp water. Let rest for 10 minutes
- Whisk flours, baking powder & baking soda
- Add in yogurt, vanilla, flax egg & almond milk until a batter forms
- If batter is much too thick, add a tablespoon or so of milk to loosen slightly
- Coat skillet with a small amount of vegan butter (optional). Drop 1/4c batter to skillet and cook until bubbles appear on surface. Flip and cook for an additional 2 minutes
- Stack pancakes adding a layer of coconut yogurt, bananas and sprinkle of cacao nibs between the cakes. Top with a scoop of banana nice cream, blueberry coulis, sliced strawberries and dark chocolate chips. Drizzle with peanut butter
