Cashew Ricotta

Vegan Cashew Ricotta

Ingredients
  

  • 1 cup Raw Cashews (Soaked) Soaked for at least 2 hours
  • 1/4 cup Water
  • 1/2 tbsp Apple Cider Vinegar Or juice of 1/2 lemon
  • 1 tbsp Nutritional Yeast
  • 1/2 Garlic Clove
  • Pinch Salt & Pepper

Instructions
 

  • Blitz all of these ingredients together in your food processor until creamy. Salt & pepper to taste
  • Enjoy straight away or put in the fridge to thicken a bit prior to serving
  • Can be stored in the freezer up to 2 months
