Cashew Ricotta
Vegan Cashew Ricotta
Ingredients
- 1 cup Raw Cashews (Soaked) Soaked for at least 2 hours
- 1/4 cup Water
- 1/2 tbsp Apple Cider Vinegar Or juice of 1/2 lemon
- 1 tbsp Nutritional Yeast
- 1/2 Garlic Clove
- Pinch Salt & Pepper
Instructions
- Blitz all of these ingredients together in your food processor until creamy. Salt & pepper to taste
- Enjoy straight away or put in the fridge to thicken a bit prior to serving
- Can be stored in the freezer up to 2 months
