These gluten-free, vegan & refined sugar free energy bites are the perfect afternoon pick-me-up! They are also date-free and low-FODMAP. Made with leftover almond meal (from making almond milk) OR simply sub out almond or oat flour!

Ingredients

  • Bites
  • 50g (1/2c) Almond Meal

  • 80g (1/3c) Peanut Butter (I use Powdered PB)

  • 20g (1/4c) Buckwheat Flakes or Oats

  • 2 tbsp Coconut Flour

  • 1 tbsp Coconut Oil

  • 2-3 tbsp Maple Syrup

  • 1/2 tsp Vanilla

  • Pinch Salt

  • Toppings (Optional)
  • Cacao powder

  • Coconut Flour

  • Dark Chocolate (melted)

  • Cacao Nibs

  • Desiccated Coconut

Directions

  • Mix all ingredients in bowl until it forms a dough that can be easily formed into small round bites. You may need to add a bit of additional Coconut Flour or Maple Syrup to achieve desired consistency for rolling.
  • Form 5 teaspoon size balls. Decorate this batch by rolling in cacao powder, coconut flour, or desiccated coconut.
  • If desired, to the remaining dough then add 1 tsp cacao powder and a bit of maple syrup to make cacao bites. Decorate with desiccated coconut or cacao nibs!
