Vegan Almond Pecan Ayurvedic Cookies
These cookies are made gluten free, vegan and refined-sugar free! These vegan Ayurvedic cookies are a mindful delight and are made with simple, wholesome ingredients that are both healthful & grounding. Almond flour and oats make up the base of this wellness cookie. Adding in cinnamon spice, oat yoghurt, chia and hemp round out the nutty texture of the cookie. Pecans for crunch and a tablespoon of vegan ghee (yes, I found vegan ghee!) make for a soft yet crisp texture.
These cookies contain hemp seeds – which are absolutely nutrient-packed! A fabulous source of protein and omega-3 & omega-6 fatty acids. They also contain high amounts of vitamin E, phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron and zinc.

Almond Pecan Ayurvedic Cookies
Ingredients
- 1 c Almond Flour
- 1/2 c GF Quick Oats
- 1/2 c Maple Syrup
- 1 t Cinnamon
- 1/2 T Hemp Seeds
- 1/2 T Chia Seeds
- 2 T Oat or Coconut Yogurt
- 1 T Vegan Ghee
- Pepitas or Coconut Sugar for topping Optional
Instructions
- Preheat oven to 350f/160c. Prepare a baking sheet with a silpat.
- Mix together all ingredients into 1 bowl until a sticky dough forms. Roll into 12 small balls, and pat down gently (cookies will not spread in oven).
- Top with pepitas or coconut cinnamon sugar (optional)
- Bake for 15-20 minutes until edges are just slightly golden. Let cool and enjoy!
