Vegan Chocolate Avocado Cookies

These decadent vegan chocolate avocado cookies are an indulgent treat! Made with oats these cookies are simple to make gluten-free as well. The creaminess of the avocado makes for a delightfully soft, moist cookie with a crisp outside. Delicious for dessert or an afternoon snack with a cuppa! I enjoyed pairing these with a cup of hot peppermint tea. The addition of almond butter and sea salt really cap off the deliciousness factor of these cookies. Super simple to put together, entirely in one bowl in less than 5 minutes. Vegan Chocolate Avocado Cookies

One bowl gluten free oat and avocado cookies with plentiful chocolate chips make for an indulgent yet healthful snack!

Ingredients
  

  • 1 Ripe Avocado, smashed
  • 2 T Almond Butter
  • 1 T Avocado Oil
  • 3 T Maple Syrup
  • 90 g GF Oats
  • 2 T Cacao Powder
  • 50 g Vegan Chocolate Chips

Instructions
 

  • Preheat oven to 350f/160c. Prepare a silpat or baking paper on baking tray.
  • Smash avocado with remainder of ingredients until a very sticky dough forms.
  • Place by heaped tablespoonfuls on to baking tray, shaping in desired thickness and width.
  • Bake for 15-20 minutes.
  • For added fun, drizzle some almond butter on top and a sprinkle of sea salt!
