Here are three of my favourite ideas for GF, vegan galettes (can also easily be vegetarian or modified to your dietary preference!)
Tofu Ricotta, Pesto & Marinated Garlic Tomatoes Vegan Galette
Ingredients
- 1 GF Vegan Puff Pastry Sheet rolled out thin
- 15 Vine Ripened Cherry Tomatoes quartered
- 1 jar Vegan Pesto
- 2 T Garlic-Infused Olive Oil
Tofu Ricotta
- 14 oz Firm Block Tofu
- 3 T Nutritional Yeast
- 2 T Lemon Juice
- 1 tsp Salt
Instructions
- Marinate cherry tomatoes in the garlic-infused olive oil for 1 hour (or longer if you have the time!)
- Blitz the tofu, nutritional yeast, lemon juice & salt until smooth
- Preheat oven to 200c/400f
- Leaving a 1" border, spread a layer of tofu ricotta on galette, followed by a light layer of pesto and pile the marinated tomatoes on top.
- Fold up sides of galette and pinch around the corners to ensure fillings are securely inside yet exposed on top.
- Bake for 30 minutes or until pastry is golden
Roasted Red Pepper & Eggplant Ajvar Vegan Galette
Ingredients
- 1 GF Vegan Puff Pastry Sheet rolled thin
- 1 jar Ajvar or roasted red pepper/eggplant relish
- 1 Eggplant sliced thin rounds
- 1 jar Roasted Red Peppers
- 3 T Vegan Feta
Instructions
- Slice eggplant into thin rounds, sprinkle with salt and allow to rest for 20-30 minutes. This draws out excess moisture so the eggplant has a stronger flavour and a softer texture. (optional)
- Preheat oven to 200c/400f
- Spread a layer of ajvar on puff pastry sheet
- Cover ajvar layer with eggplant rounds and cover with roasted red peppers
- Bake for 30 minutes or until golden brown
- Sprinkle with vegan feta for serve
Cheezy Potato, Zucchini & Leek Vegan Galette
Ingredients
- 1 GF Vegan Puff Pastry Sheet
- 2 Medium Potatoes sliced thin rounds
- 1 Leek chopped, washed
- 1 Zucchini sliced thin rounds
- 1 cup Vegan Mozzerella
- 2 T Fresh Thyme
- 1 t Salt
- 2 T Garlic-infused olive oil
Instructions
- Preheat oven to 200c/400f
- Slice potatoes, cover in olive oil and roast on a baking sheet in a single layer for 20 minutes, allow to cool slightly
- Slice leek and saute for 5 minutes to soften
- Roll out puff pastry and cover in potato, leek and zucchini rounds. Sprinkle with fresh thyme and salt. Cover in vegan mozzerella. Bake for 30 minutes or until golden.
